The BEST Tomato Soup Ever

3 Tbl Olive Oil
2 Lg onions chopped
5 C diced tomatoes
2 C chicken stalk
1 1/2 C whipping cream
1 C Basil Pesto (best place to get this is Costco)
salt & pepper to taste

Heat oil in medium soup pot, add onions until clear. Add tomatoes and bring to a simmer, add chicken stalk and simmer about 15 min. Add whipping cream and pesto. Let soup cool a little then blend all together in a mixer to desired consistency. Season with salt and pepper and heat blended soup back in pot until warm.

Umm, this sounds delicious, I will definitely have to try it! I still haven't done Cafe Rio yet ... this week has been too busy for a new undertaking such as that. But I'm thinking next weekend! I would love to try whatever recipe you make for your family, Liz, since that is probably a better size for us than 24 servings. ;) Plus it is tested and tried!
