Blueberry Muffins for Austin

These muffins were a favorite of Austin's and the recipe came from my good friend Gail Wheatley who died of breast cancer about 9 years ago. I was thinking about it yesterday when it was Austin's birthday and thought I'd post it!

1 stick butter
2 large eggs
2 cups flour
1 cup sugar
2 tsp. baking powder
1 tsp. vanilla
1/4 tsp salt
2 1/2 cups blueberries

Beat butter creamy and then add sugar and beat until pale and fluffy. Add eggs, 1 at a time, beating well after each. Stir in vanilla, baking powder and salt. With rubber spatula, fold in half of the four and half of the milk. Repeat. Fold in berries (I usually used frozen). Spoon into muffin cups. Sprinkle with mixture of sugar & nutmet (about 1 tbl. sugar to 1/4 tsp nutmeg)

Bake 25 - 30 minutes at 375.
