Orzo & Peas side dish...

I made this side dish a few weeks ago & served it with Salmon. It was a pretty meal, both nice but relatively inexpensive and very easy...so I thought I'd share it....I thought especially of Lindsey & Joe and when they have Sunday dinner guests.

The salmon was just simply broiled/baked but dad had bought a dry rub at Costco that was really good. It was called Weber (like the grill) Grill Creations DRY RUB...Sweet 'N Savory Salmon. I'd definately recommend it.

The side dish was simple.....Prepare orzo pasta. Cook until done and then add frozen peas and cook until the peas are hot. In a frypan saute some green onions with some garlic in olive oil. Then add a couple handfuls of fresh spinach and cook quickly until wilted and then add the drained orzo and peas. Season with salt and pepper and whatever else you would like. It's a nice sidedish that takes care of your starch and veggies. Add a salad and maybe some bread and you have a nice looking and great tasting supper!
