Joe and I made this recipe from the "getting started" cookbook the other day (see our blog). It turned out pretty good but the flavors were a little off. I would try it with one less potato and maybe partially peel the potatoes. And add plenty of salt and pepper. It was worth a try though! Just have to avoid the overwhelming potato-skin flavor that we ended up with. Also, we used red potatoes, and I think the ordinary baked potatoes would be better. I'm so excited about this Vitamix!
