Corn, Black Bean & Mango Salad / Salsa

6 ears of corn (grilled, roasted or parboiled for 5 minutes) removed from cob

2 garlic cloves, finely minced

2 cups diced, peeled ripe mango (about 2 lbs)

1 cup red onion, chopped

1 cup red bell pepper, chopped

1/3 cup fresh lime juice

3 Tbsp fresh cilantro, chopped

½ tsp salt

½ tsp ground cumin

1 small can hatches chopped green chilies or fresh jalapeno to taste

2 (15 oz) cans black beans, rinsed and drained

Mix all ingredients. If making a day ahead, add the cilantro and mangos up to an hour before serving.
