This recipe is from Dr. OZ. I thought for 150 cal. they were pretty good and nutritious. Seems like a good recipe to get some basic proportion of ingredients and then tweak until you really like it. For me, the agave flavor was a little strong, so I might decrease that a bit.
1 TBL ground chia seeds
1 1/2 cup whole wheat flour
2 tsp baking soda
1/2 tsp salt
1 cup sweet potato puree
1 cup unsweetened apple sauce
2 egg whites
1/2 cup agave syrup
2 tsp lemon juice
1 tsp lemon zest
1 TBL vanilla extract (this seems a bit much)
1/2 cup dried cranberries
Mix together wet ingredients. In a separate bowl, mix dry ingredients.
Fold wet ingredients into dry and stir gently until combined
Scoop into muffin tin and bake for 14-20 minutes at 350. Makes 12-14
