Basic Quinoa & Black Beans

This gives an idea of seasoning etc, and you could play with this recipe.  I liked it as a side dish with other stuff my non vegetarian family wanted to eat.

1 tsp olive oil
1 onion, chopped
3 cloves garlic, chopped
3/4 cup rinsed quinoa
1 1/2 cup veggie broth
1 tsp ground cumin
1/4 tsp cayenne pepper
salt and pepper to taste
1 cup frozen  corn kernels
1 or 2 cans black beans, rinsed and drained
1/2  cup chopped fresh cilantro

Heat oil and saute onion and garlic until lightly browned
Mix quinoa into this and cover with vegetable broth.  Add seasoning and bring to boil, cover, reduce heat and simmer 20 minutes.  Stir in frozen corn, black beans and cilantro and simmer 5 minutes more.
