Swiss Bircher Muesli


BIRCHER MUESLI -  This is a traditional swiss food that we would often had as a summer dinner on a hot California night as I was growing up.  This is really the origin of "muesli" and granola and in its original form was more of a dry cereal with dried fruit.  "Bircher" was the name of the doctor who 'invented' this for his patients as health food around 1900.

2 coarsely grated apples
2 cups rolled oats (not quick oats)
1 large container yogurt (32 oz)...I often use "Australian Style" because it is thinner, but you could also      
       use greek Yogurt or any kind actually, but you might want to thin it down with almond milk so the
       consistency of Birchermeusli is how you like it. Plain or Vanilla depending on your preference.
3 oranges, slices cut up into  chunks
1 TBL chia seeds (I just add this for the Omega 3s.  You don't taste them)
1/2 cup almonds finely chopped...or not
1 cup blueberries...or more
1 TBL lemon juice - maybe helps keep the apple from browning

You can be flexible with the fruit you add...although the apples and oats are essential.  You could add cinnamon,  different nuts, dried fruits, different fresh fruits, coconut etc.  The above (minus the chia seeds) is the way I remember it from growing up.
