Cafe Rio recipes

Cafe Rio Rice
5 cups water
2.5 cups rice
4 tsp. chicken bouillon
4 tsp minced garlic
Blend the following in a blender:
1/2 bunch of cilantro
1 can chopped green chilies
1/2 onion, chopped
Bring water to a boil and add all the ingredients.
Simmer 30 minutes.
Pork Barbacoa
3 lbs pork roast
1 c. Worchestershire sauce
1/2 c. brown sugar
1 tsp ginger
1 tsp oregano
1 tsp salt
1 tsp chili powder
3 cloves garlic, minced
2 TBSP minced onion
Combine ingredients, pour over roast in crockpot.
Cook all day on high until it shreds easily.
Add 1 can red enchilada sauce and 1/2 cup brown sugar, mix well.
Note:  I prefer the small pork roasts sold at Costco.  You can buy 4 at a time (about 9 lbs). They are individually packaged and easy to freeze.  They are lean and shred perfectly after a day in the crock pot.  I cooked 2 in each crock pot and that amount fed 30 hungry missionaries!  (They ate a LOT!)  Doubling the rice and dressing was plenty.
Creamy Tomatillo Ranch Dressing
1 pkg ranch dressing mix
2/3 c. milk
2/3 c. sour cream
2/3 c. mayonnaise
2 tomatillos
1/2 bunch cilantro
1 clove garlic, minced
juice from 1 lime
Blend in blender and refrigerate
Serve with:
Warm tortillas
Black beans
Shredded lettuce
Chopped tomatoes
Shredded cheese
Cilantro
Chips & Salsa
