Gluten-Free Granola

GRANOLA

3/4 cup raw honey
1/2 cup coconut oil
2 tsp cinnamon (I often used pumpkin spice) 
2 tsp vanilla

4 cups oats (not quick oats)
1/2 cup flax seeds
1 cup pumpkin seed kernels
1 cup chopped raw almonds
1 cup sunflower seed kernels

1 cup (plus more to how you like it) unsweetened flaked coconut 

Preheat oven to 325. Heat up the first 4 ingredients together in the microwave. Pour honey mixture over the mixture of the next 5 ingredients and stir to coat. Spread out oat mixture on a cookie sheet. Bake for 20 minutes, stirring every 5 minutes. Add  and coconut.
