1 cup old
fashioned rolled oats
½ cup oat
flour (I grind oats)
½ dried
cranberries or other dried fruit
½ cup
unsalted pumpkin seeds
¼ cup ground
flaxseed
1 TBL chia
seeds
1 tsp
cinnamon
½ tsp baking
powder
¼ tsp salt
1 large
mashed banana
3 TBL melted
coconut oil
3 TBL honey
2 TBL almond
milk or milk of choice

1. Preheat
oven to 325.
2. Combine
dry ingredients into a large mixing bowl
3. Combine
mashed banana, coconut oil, honey and milk until well blended
4. Add to
dry ingredients and mix well. Let mixture stand for 5 minutes to give time for
the chia & flax to bind everything together.
5. Measure
out dough by a scant ¼ cup onto cookie sheet lined with parchment paper. They
won’t spread.
6. Bake for
about 18-20 minutes
7. I like to
leave the “cookies” out for quite a while to let them dry out a little more
because I just prefer them a little dryer.
