FLORENTINER Cookies
8 fl oz whipping cream
293 grams powdered sugar
235 grams peeled and coursely chopped almonds
90 grams flour
Chocolate to melt and spread if desired
Preheat oven to 375
Place first three ingredients in pan over medium-high heat and bring to a rolling boil, stirring constantly. Boil several minutes and then add flour. Continue stirring and boiling for several more minutes. Then place by rounded teaspoon on foil covered cooked sheet that has been buttered. Bake about 10 minutes until the edges begin to turn golden brown. Removed from oven and place foil sheet on counter for cookies to cool. Peel off from foil and if you'd like, melt chocolate and spread on the back of the cookie.
This was one of my very favorite Christmas cookies that my family made as a kid. In those days we would buy almonds in the shell and crack them together.
