3 Ramen Packets - the Costco ones are good
3 TBL sesame oil
1 pound ground turkey or chicken
1/3 cup diced onion
1/2 tsp salt - more to taste
1/4 tsp pepper - more to taste
4 cloves minces garlic
1 TBL fresh ginger (or some ground ginger)
2 large carrots cut into matchsticks
2 cups shredded cabbage
1.5 cups chopped brocolli
1 cup chopped peanuts (optional)
SAUCE
1 cup chicken broth
2 TBL soy sauce
2 TBL rice wine vinegar
1 TBL Hoisin sauce
1 TBL asian chili sauce (I left this out cuz I didn't have any)
1.5 tsp cornstarch
Garnish with. chopped peanuts and green onions
1- Cook ramen in boiling water for 2 minutes (NOT MORE). Reserve one cup pasta water
Rinse noodles with cool water and toss with drizzle of sesame oil to keep
noodles from sticking
2- Heat skillet with 1 TBL sesame oil over medium heat. Add ground turkey, onions,
salt, pepper and cook until browned. When meat is almost cooked through add
carrots, brocolli, garlic, ginger and cabbage. Cook for 2 more minutes
3- Add the sauce and stir, bring to simmer for 30 seconds and then add noodles and
toss until evenly coated. Add peanuts and toss. Add reserved water as needed.
