Mini Cookies
2 1/4 cups flour
1/2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter room temperature
3/4 cup granulated sugar
1 egg at room temp
1 1/2 tsp vanilla extract
1/4 tsp almond extract
Icing
3 cups powdered sugar
5 TBL milk
1 tsp vanilla extract
Whisk dry ingredients
Beat wet ingredients - butter and sugar together 2-4 minutes. Add egg, vanilla and extract and beat another 2 minutes
COMBINE
Divide in half and roll out in between 2 pieces of parchement. refrigerate at least 2 hours.
Cut out cookies and bake 8-9 minutes at 350
Cool completely before icing
ICING - use a fork to combine and smooth it al. Add GEL food coloring and dip into icing. Takes about 2-3 hours to fully set
